Care & Cleaning

Cleaning

1. Do not use regular dish soap!

Dish soap dissolves grease and can damage the oiled surface of the board.

Use only the surface cleaner tested and certified by us.

 

Important note:

Using any cleaning agent other than the recommended product voids the legal warranty.

 

2. Cleaning:

Rinse both sides first with cold water, then with hot water.

(prevents protein coagulation and warping).

Lightly mist both sides with the recommended surface cleaner,

Let sit for about 1 minute, then clean with a clean, lint-free wiping cloth or the included pad.

 

Note:

The pad lightly sands the surface. This keeps it smooth and easier to clean.

Oil the cutting board as needed (for graying, water absorption, or small cracks).

 

1. Cleaning & drying

Clean the cutting board as described.

Let dry completely – store dust-free, grease-free, and dry.

 

2. Apply oil as needed

Shake care oil vigorously.

Apply care oil evenly to both sides.

Work in with a fine stainless steel sponge or the included pad in circular motions.

 

3. Let absorb

Let rest for at least 15 minutes.

Best to let dry standing on the narrow side.

 

4. Remove excess

Remove excess with a clean cotton cloth.

Dry polish for optimal sealing.

Drying time & conditions

8 hours at approx. 20 °C room temperature.

Relative humidity: 40–60%

(The drier the air, the better the result.)

 

Important:

Do not use the cutting board while drying.

The care oil may emit a slight natural odor during this time.

Care oil – Application & storage

Shelf life: 2 years in the sealed original container.

Yield: approx. 100 uses per 250 ml container.

Processing temperature: not below 16 °C.

After transport: let rest at room temperature for at least 24 hours.

Stain Removal

Please wear disposable gloves!

 

1. Direct application

Apply stain remover undiluted. Let it absorb.

 

2. Enhanced effect

Soak a kitchen towel with stain remover. Place directly on the stain – shortens the exposure time and increases the cleaning effect.

 

3. Observe the mode of action

The stain remover dissolves the protective oil layer. Be sure to re-oil afterwards.

 

If necessary, repeat the process until the stain is removed.

Why is end grain wood better than regular wood for cutting boards?
With end grain, the wood fibers point upwards – like a tree trunk viewed from above. When you cut with a knife, the blade slips between the fibers instead of cutting through them. This has two major advantages: your knife stays sharp much longer, and the board develops fewer deep cut marks. The fibers can close up again after cutting – that's why it's called a "self-healing" surface. So your board still looks good even after years of heavy use.
Can I cut raw meat on the board?
Yes, absolutely! Our wooden cutting boards are the only ones worldwide that are HACCP-certified together with the care set – this is the hygiene standard required in professional kitchens and restaurants. This means: scientifically proven no critical bacteria if you treat the board with the HACCP cleaner after each use. So you can safely process raw meat, fish, or poultry on it – just as hygienic as on plastic, but with all the advantages of wood.
How do I properly care for the board to make it last a long time?
Care is easier than many think. After each use, wipe the board with a damp cloth and some dish soap, dry it thoroughly, and let it air dry (not in direct sunlight or on the heater). Once a month – or when the wood looks a bit drier – treat it with care oil. Simply apply generously, let it soak in, done. With this routine, your board will last a lifetime. Important: never put it in the dishwasher or soak it in water for a long time.
What do I need the juice groove for?
The juice groove is a continuous indentation around the edge of the board that catches liquids. This is especially practical when you’re cutting juicy fruit, tomatoes, or meat—the juice won’t spill over the edge onto the countertop. If you mainly cut vegetables, bread, or dry ingredients, you don’t need a juice groove. Tip: With the version without a juice groove, you have the full work surface available and can use the board more flexibly.
Which size is right for me?

It depends on how you cook and how much space you have:

  • 30 × 20 cm: Perfect as a breakfast board or for small kitchens
  • 30 × 30 cm: Good for singles or couples, ideal for vegetables and bread
  • 40 × 30 cm: The all-rounder – fits in most kitchens and offers enough space
  • 50 × 30 cm: For ambitious home cooks who cook a lot and enjoy it (most popular size)
  • 60 × 40 cm: The XXL board for large kitchens, professionals, or anyone who needs a lot of space for cutting

Can I put the board in the dishwasher?
No, please never! The heat and the large amount of water in the dishwasher would cause the wood to swell, warp, and crack. Wood is a natural material that reacts sensitively to extreme moisture and temperature changes. Cleaning by hand is quick and easy with our HACCP cleaner – done in under a minute.
Does the board warp over time?
Not with proper care. Walnut is a very dimensionally stable hardwood, and our end-grain construction further minimizes the risk of warping. It is important that you never leave the board wet for extended periods, do not place it on the heater, and oil it regularly. The versions with cutting board stoppers or feet have the advantage that air circulates under the board – this helps with even drying and prevents deformation.
Can I also use the board for serving?
Absolutely! Especially the version with silver aluminum feet is a real eye-catcher on the dining table. The oak grain looks elegant and makes the board the perfect serving platter for cheese, charcuterie, bread, or antipasti. Many of our customers intentionally use the board on both sides: one side for cutting, the other for serving. Tip: If you want to use the board often for serving, choose the version with aluminum feet – they look the most elegant.
What should I do if the board gets scratched?
This is completely normal and part of the patina of a well-used board! Light cut marks partially disappear due to the self-healing property of end-grain wood and are hardly noticeable after oiling. If the board is more worn after years of intensive use, you can always sand it yourself with fine sandpaper (grit 120-180) and then re-oil it – it will look like new again. Many customers especially love this option: an end-grain board is not "broken" after a few years but can be refinished again and again.
