Description

Our chef's knife in the ladies' size. In fact, we have found that many chefs prefer to work with a slightly shorter chef's knife blade. Therefore, we developed a second chef's knife with a 16 cm long blade. The cutting and rocking function is, of course, retained!

The handles are made from hand-friendly olive wood or 8,000-year-old bog oak. They must not be cleaned in the sink or dishwasher!

Origin

Our thoughts on developing the perfect chef's knife focus on the quality of the selected materials, the craftsmanship involved in designing, developing, and manufacturing the knife, and on comfortable and versatile usability.

Blade

The blade is made from high-quality Swedish Sandvik steel 12C27. The material was produced by block casting and hardened to 59 (+/-1) Rockwell. This gives the steel the optimal hardness level, as it remains flexible despite the high hardness, allowing it to withstand heavy use while maintaining its edge retention. Furthermore, the high-quality steel ensures good resharpening capability. The blade is ground thin with the highest precision, hand-polished, and honed.

The blade shape allows for easy rocking motion while the integrated finger guard provides a high level of safety.

This knife was created through decades of family experience in our sharpening workshop. The logo “Karl d’r Schlieper” shows the great-grandfather of the family, Karl Clauberg, at the grinding wheel and symbolizes the tradition of our family business, which combines traditional Solingen sharpening craftsmanship with modern design.

The chef's knives are available with handles made of bog oak and olive wood. The knives are not dishwasher safe and should be washed by hand with clear water. Occasionally, it is recommended to care for the wooden handle with linseed oil.

  • Do not leave used cutlery or kitchen knives unwashed for long
  • Dried-on residues are harder to remove
  • Alkaline and acidic foods can attack the steel
     

BLADE PROTECTION

KNIFE STEELS

  • Avoid contact with other blades or metallic objects
  • Rinse acidic and alkaline food residues with lukewarm water
  • Soften dried-on residues with dish soap and rinse off
  • When using a dishcloth, use only soft fibers
  • Clean and dry with the sharpening pattern to avoid scratches
  • Blades can be carefully rubbed with metal care oils from time to time

DLC

  • Blades with DLC (Diamond Like Carbon) coating are scratch-resistant and require no special care
    • NEVER clean with metallic scouring pads!
  • Please use our sharpening service only to avoid damaging the DLC coating!

  • Wooden handles must be stored dry
  • They are not stabilized
  • Short contact with water for cleaning is possible

      1. Do not put in the dishwasher: Clean your knife exclusively by hand.

    

       2. Clean the blade: Under running hot water combined with our surface cleaner                                           and dry thoroughly immediately.

       3. Do not use abrasive cleaners: Avoid cleaning agents or sponges with abrasive particles, as                                         these can cause scratches on the blade. Instead, use soft                                             cloths, brushes, or sponges without abrasives.

 

Care for wooden handle:

           - Do not leave handles soaking in water.

           - Dry thoroughly immediately after cleaning.

           - If needed, regularly oil the wooden handle with the care oil to prevent drying out and                 protect the surface.
